A long standing staple of both British and Irish cooking, sausage rolls are a tasty mix of flavorful breakfast meat and puff pastry. Each bite is buttery and flaky, making a great dish to serve during brunch or as a snack. Plate with jam, ketchup, or stone ground mustard for a tasty dipping sauce to elevate this recipe even more. These rolls taste great hot or cold and freeze well for easy reheating in the future. Enjoy!

Ingredients:
*1 pound breakfast seasoned ground pork, I like using Mulay's
*1/2 cup panko bread crumbs
*1 sheet of puff pastry, thawed
*1 egg
*2 tablespoons water
Preparation:
*Combine pork and bread crumbs in a mixer or with a fork.
*Preheat oven to 425F.
*Lightly flour a work surface and roll out the thawed puff pastry into a 12x9 rectangle. Cut the pastry in half length-wise so you have two long strips.
*Divide the sausage mixture into two equal portions and begin hand rolling into logs about 1-inch thick.
*Place each log of sausage into the middle of the puff pastry strips.
*Combine egg with water to make egg wash and brush along the edges of the puff pastry.
*Pull both sides of puff pastry up to meet in the middle, completely covering the meat. Gently pinch the seam together so that there are no holes.
*Flip the logs over, seam side down and cut each into 4 equally sized pieces.
*Use a sharp blade to slice 3-4 venting holes into the top of each piece.
*Place onto baking tray, seam side down. Combine egg with water to make egg wash and brush onto the top and sides of each roll.
*Bake for 25-30 minutes, rotating the baking sheet once half way through.
