Greek Lamb Koftas Taste Test

If you enjoy Greek food, you have to try this recipe! I love the flavor combinations in Greek cooking and frequently visit our local Greek restaurant for meals, but with this recipe in my repertoire, I can now make some of my favorites at home! The cumin and coriander marry perfectly with the gaminess of the lamb. If you do not have access to a grill, these bake up nicely in the oven as well. A relatively quick recipe, these koftas will provide a tasty protein boost to your meal.

Makes 8 skewers

Preparation Time: 25 minutes

Cook Time: 14 minutes

Cost: $12


Ingredients:

*1 pound lean lamb mince

*2 tablespoons fresh parsley, chopped

*1 teaspoon minced garlic

*1 teaspoon ground cumin

*1 1/2 teaspoons ground coriander

*8, 3 inch wooden kabob skewers (can use toothpicks), soaked in cold water


Preparation:

*Mix lamb mince, parsley, garlic, cumin and coriander.

*Season with salt and pepper.

*Divide the mixture into 8 balls.

*Form each ball around the pointed end of a skewer.

*Refrigerate for at least 30 minutes.

*Barbecue koftas over medium heat until browned and cooked through. This will take 6-8 minutes. (instead of barbecuing, I baked these in the oven at 400F for 12 minutes, then broiled for 2 minutes)
