If you are looking for a healthy protein that comes together in just about 10 minutes, then look no further than this recipe! High in magnesium and omega-3s, scallops are great for you while tasting decadent. Lemony and buttery this dish absolutely melts in your mouth!
Scallops may seem difficult to cook with, but as long as you do not overcook them, they will turn out great. If you have a food thermometer and want to ensure that they are cooked through, bring them up to 120F in the pan and then pour them out. They will continue cooking a bit off of the pan, bringing their internal temperature to an ideal 130 - 135F. Enjoy!
Makes 4 servings

Cook Time: 5 minutes
Ingredients:
*1 tablespoon unsalted butter
*1 pound scallops
*Sprinkle of salt and pepper
*3 tablespoons unsalted butter
*2 garlic cloves, minced
*1 tablespoon lemon juice
Preparation:
*Rinse scallops with cold water and pat dry.
*Sprinkle salt and pepper over scallops.
*Place butter in pan over medium heat and melt.
*Add scallops in a single layer to the pan. Cook for 1 minute and 30 seconds then flip and cook for another 1 minute and 30 seconds. Remove from pan and set aside.
*Add 3 tablespoons of butter and garlic to pan and sauté for 1 minute. Stir in lemon juice.
*Pour lemon butter sauce over scallops to serve. Garnish with a sprinkle of parsley.
