Roasted Corn Salad Taste Test

Yum, yum, yum! This easy and delicious recipe was a joy to make and eat. The tangy and sweet corn salad with the sweet sauce on the chicken wings made for a delicious dinner that I’ll definitely make again!



Makes 2 quarts

Cook Time: About 20 minutes


Ingredients for Corn:

*2 cups roasted corn

*1 cup Roma tomatoes, chopped

*1 cup chopped, fresh cilantro

*2 cups shaved carrots

*1/2 cup olive oil

*Salt and pepper, to taste


Preparation:

*Cook corn on grill and shave off kernels.

*In a large mixing bowl, add all ingredients and toss until combined.


Ingredients for the Vinaigrette:

*1 cup olive oil

*1/2 cup fresh lemon juice

*1 tablespoon Dijon mustard

*1 cup chopped, fresh parsley

*Salt and pepper, to taste


Preparation:

*In a blender or mixer, add all ingredients.

*Mix on medium speed until well combined (7-10 seconds).

*Set vinaigrette in a bowl next to the corn. Not everyone will want the vinaigrette, so they can add it if they wish.
