Parmesan Breakfast Potatoes



A crispy and satisfying side, these potatoes are a wonderful compliment to other brunch favorites like eggs, bacon, and sausage. The smoked paprika and parmesan in this dish are the real stars. They pair wonderfully with the rosemary to create a flavor profile that is brunch ready while at the same giving the dish a unique flair from typical breakfast style potatoes. Enjoy!

Makes 6 Servings

Preparation Time: 10 minutes

Cook Time: 15 minutes



Ingredients:

*2 pounds red potatoes, diced into 1/2 inch pieces

*2 tablespoons and 1 tablespoon olive oil, divided

*1/2 teaspoon smoked paprika

*1/2 teaspoon dried rosemary

*1/2 teaspoon salt

*1/4 teaspoon pepper

*1/2 red bell pepper, diced

*1/2 small sweet onion, diced

*1/4 cup parmesan


Preparation:

*Preheat a cast-iron skillet over medium heat.

*Prepare the bell pepper and onion.

*Add the bell pepper and onion to the skillet and cook undisturbed for 5 minutes, until the onion becomes translucent.

*Stir well and continue cooking for 10 more minutes.

*In the meantime, preheat the air fryer to 400F.

*Place potatoes, two tablespoons olive oil, paprika, rosemary, salt and pepper into a bowl and combine.

*Pour potatoes into air fryer and cook, stirring once, for 10 minutes.

*Add the potatoes to the cast iron skillet and top with parmesan before serving.
