Grilled Vegetable Skewers



Happy Foodie Friday! Nothing is more refreshing than a skewer of bright summer vegetables hot off of the grill. This colorful spread paired perfectly with the Maple Citrus Salmon. The skewers were relatively quick to make and yielded a tasty addition to the meal. If you want to change up your vegetables used, you could easily use tomatoes, cauliflower, mushrooms, or anything else you prefer.


It takes awhile to cut up all of the vegetables so if you prefer prepping ahead of time, slice everything up a day or two before grilling and keep in your fridge. The step after placing the vegetables on skewers is coating in olive oil, however you can substitute an Italian or balsamic vinaigrette to punch up the flavor. These skewers are such a hit that whenever we are grilling I always prep a few as they are a tasty addition to any meal.



Grilled Vegetable Skewers

Makes 4 Servings

Preparation Time: 40 minutes

Cook Time: 15 minutes


Ingredients:

*1 red onion

*1 green bell pepper

*1 orange bell pepper

*1 red bell pepper

*2 zucchinis

*2 yellow squash

*3 tablespoons olive oil


Preparation:

*Place approximately 10 wooden skewers in water to soak for at least 15 minutes. The number of skewers can vary based on size of skewers and size of vegetable pieces.

*Preheat grill to medium-high heat.

*Cut the onion and peppers into approximately 1-inch by 1-inch pieces, and cut zucchini and yellow squash into rounds.

*Place vegetables on skewers, alternating between red onion, the different colored bell peppers, zucchini, and squash pieces.

*Brush skewers with a light layer of olive oil.

*Add skewers to grill and cook for approximately 5-7 minutes per side, or until vegetables are beginning to soften and brown around the edges.
