Granola Parfait Taste Test

One of my favorite meals to eat in the morning is a yogurt parfait. Homemade granola certainly was a step up from store bought granola, and it was very simple to make. The flavors of all of the ingredients go very well together to make a light, crunchy, and sweet granola to pair with some Greek yogurt. The best part about this granola recipe is, if you don’t use all of it at your next brunch, you can easily store it to use any time!

Makes 12 Servings

Time to make: About 1 hour


Ingredients:

*6 cups uncooked old fashioned oats

*2 cups sliced almonds

*1 cup shredded coconut

*1 cup roasted and salted sunflower seeds

*1 tablespoon flaxseed

*1 tablespoon wheat germ

*1 small bag dark chocolate morsels

*1/2 cup coconut oil, melted

*1 cup honey

*Greek yogurt

*Raspberries

*Strawberries, sliced


Preparation:

*Preheat the oven to 325F.

*Mix first six ingredients in a large mixing bowl.

*Melt your coconut oil in a small bowl in the microwave (about 30 seconds to 1 minute).

*Add the honey to the coconut oil and mix well.

*Pour over oat mixture and stir.

*Pour onto cookie sheet and spread into an even layer.

*Bake at 325F for about 15 minutes, then stir it & let bake for another 10-15 minutes, until golden brown.

*Let granola cool. Store in an airtight container.

*When ready to assemble, place yogurt in bottom of individual glasses. Add a layer of granola, then 2 teaspoons chocolate morsels, then berries. Repeat.
