Packed with a smoky kick from the paprika and a bright tang from the lemon and parsley, this dish checks off all of the flavor boxes. Ingredients:
*1 head of cauliflower, cut into florets
*2 tablespoons olive oil
*1 teaspoon oregano
*1/2 teaspoon cumin
*1 teaspoon chili powder
*1/2 teaspoon of ground turmeric
*1/2 teaspoon smoked paprika
*1 teaspoon salt
*1/2 teaspoon pepper
Ingredients for sauce:
*1 avocado
*2 tablespoons tahini
*Juice of 1/2 a lemon
*Lemon zest of 1/2 of a lemon
*2 tablespoons of parsley
*1 clove of garlic
*Splash of water
*1 tablespoon of olive oil
Preparation:
*Preheat air fryer for 5 minutes.
*Place the cauliflower florets in a large bowl and add the oil and all spices, tossing to coat.
*Air-fry for 15 minutes, tossing every 5 minutes.
*While the cauliflower is cooking make the green sauce by combining the avocado, tahini, garlic, lemon juice+zest, parsley, and olive oil. Blend until smooth.
*Serve cauliflower on a platter with fresh lemon slices, avocado sauce, parsley, and a drizzle of olive oil.
