A delicious treat to add to a Saturday morning brunch or enjoy at the end of a long day, this quick recipe is a perfect way to serve a tasty dish without too much time in the kitchen. From the gooey caramel sauce to the toasted pecans, the flavors transport me back to childhood. I created this recipe based on rolls my mom would make every Christmas. Though not quite the delicious homemade dough my mom spent hours prepping, I’ve found that biscuits work as a yummy substitute and cut down on time. A tip for your extra caramel sauce: it’s great stored in the fridge for up-to a month and added to a latte or drizzled over ice cream! Enjoy!
Makes 8 servings
Preparation Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
*1 tube of biscuits
*3 tablespoons melted butter
*1 cup of sugar
*6 tablespoons unsalted butter, cubed
*1/2 cup heavy cream, at room temperature
*3/4 teaspoon salt
Preparation:
*Preheat oven to 350F - or package instructions for biscuits.
*Grease a 9x12 pan.
*Cut biscuits into quarters and lay them out in the pan so there is only a bit of overlap.
*Pour melted butter over the biscuits.
*Bake for around 20 minutes until lightly golden brown.
*While biscuits are baking, heat sugar in a medium sized saucepan over medium heat. Stir constantly with a wooden spoon. The sugar will clump and then melt into an amber colored thick liquid as you stir. Keep heat at a medium/low in order not to burn.
*Once sugar is fully melted and a deep amber, vigorously stir in the butter until melted and combined. Use extra caution during this step as the caramel will bubble rapidly at the addition of the butter. Wear kitchen gloves, or the gloves you use with a curling wand to protect your hands if you are worried. (In the event that the sugar and butter separate, remove from heat and whisk together rapidly until combined, can take up to 5 minutes)
*After the butter has completely melted, slowly pour in the heavy cream while stirring simultaneously. Again use extra caution as the mixture will bubble rapidly when the cream added.
*Once the cream is added, stop stirring and let the mixture boil for 1 minute. It will rise up as it boils.
*Remove from heat and add in the salt.
*Let cool for 5 minutes.
*Remove biscuits from oven and pour caramel sauce and a sprinkling of pecans over the top.
