As we are gearing up towards the holiday season, I like to have versatile staples on hand for quick lunches and dinners. These meatballs are a tasty addition to pasta, mashed potatoes and veggies, or a rice pilaf. I typically make a large batch and divide out half for a few meals and then freeze the remainder to pull out as needed in the future. They come together quickly and taste just as good after they've been frozen as they do fresh out of the oven.

Ingredients:
*2 pounds ground beef
*2 eggs, beaten
*1 tablespoon olive oil
*3/4 cup panko breadcrumbs
*3/4 cup grated parmesan
*2 teaspoons dried oregano
*1 teaspoon onion powder
*1/2 teaspoon chili powder
*1 1/2 teaspoons salt
*1/2 teaspoon pepper
Preparation:
*Preheat oven to 400 F. Line a baking sheet with parchment paper or a silicon liner.
*In a large bowl combine the beef, eggs, olive oil, breadcrumbs, parmesan, oregano, onion powder, chili powder, salt, and pepper. Stir until just mixed.
*Form the mixture into 1 1/2 inch balls and place on the prepared baking sheet.
*Bake for 15-20 minutes until fully cooked.
