Simple White Bean and Vegetable Soup



Coming together in just over 30 minutes, this soup is a quick and easy recipe to throw together for a weeknight dinner. It also makes a great starting course to serve at a party. The flavors balance well to create a light but filling dish perfect for transitioning into autumn. If you are feeling a bit under the weather, this dish helps soothe and warm, and will bring a pep into your step in no time! Enjoy this fall time favorite with a slice of fresh bread.



Makes 6 servings

Preparation Time: 10 minutes

Cook Time: 25 minutes



Ingredients:

*1 tablespoon olive oil

*1 sweet onion, chopped

*2 carrots, chopped

*3 celery stalks, chopped

*2 garlic cloves, diced

*1/2 teaspoon oregano

*1 teaspoon thyme

*1/2 teaspoon pepper

*6 cups of chicken broth

*3 cans of white beans, drained and rinsed

*1 can of diced tomatoes

*Fresh parmesan for serving


Preparation:

*In a large pot heat olive oil over medium high heat.

*Add in the onions and cook for 3-5 minutes until translucent.

*Next, toss in the carrots, celery, garlic, oregano, thyme, and pepper. Cook for 3 minutes.

*Pour in the chicken broth, beans, and tomatoes. Bring mixture to a boil, then reduce heat and simmer for 15 minutes.

*While the soup of simmering grate some parmesan cheese to add on top for serving, enjoy!
