This dessert may be my favorite I have ever made. The key lime throws a tart punch into the dish that pairs beautifully with the sweetness of the mango. The lime zest added a tasty pop to each bite and when I make this recipe again I will add even more zest. Though I love sweet things, after tasting the mousse base, I forwent adding honey to the mangos in the third step as it would have made the dish too sweet for my liking. If you are serving these at a party I would recommend adding a little bit of honey drizzled over the top with a sprig of fresh mint for the presentation. Overall this dessert was refreshing and tangy while still feeling decadent. All in all, a fantastic dish!
Makes 2 servings
Cook Time: 2 hours and 45 minutes (must chill mousse for 2 hours)

Ingredients for the mousse:
*1 15 ounce can sweetened condensed milk
*1/2 cup keylime juice
*1 teaspoon gelatine (1/2 an envelope)
*1 cup heavy whipping cream
*2 tablespoons sugar
Ingredients for the graham crumbs:
*1 cup crushed vanilla wafers (or graham crackers)
*1/4 cup melted butter
Ingredients for the mango salad:
*1 mango
*1/4 teaspoon key lime zest
*1 teaspoon honey
Ingredients for the whipped cream:
*1/2 quart heavy whipping cream
*2 tablespoons corn syrup
Preparation for the mouse:
*Soak gelatin in 1/8 cup cool water for 5 minutes.
*Heat sweetened condensed milk and sugar on stove top until it reaches a gentle simmer.
*Add gelatin to heated milk and whisk until combined.
*Add key lime juice to milk/gelatin mix.
*Whisk heavy whipping cream into the other ingredients.
*Place entire mixture into a metal bowl and place in refrigerator to chill for 2 hours.
Preparation for the graham crumbs
*Put graham crumbs in a bowl.
*Melt butter and pour into graham crumbs.
*Toss butter and graham crumbs until it looks like wet sand.
*Set aside to use as garnish.
Preparation for the mango:
*Chop mango into 1/4 inch pieces or smaller and toss with honey and lime zest.
*Set aside.
Preparation for the whipped cream:
*Whip heavy whipping cream and corn syrup to soft peaks.
Assembling the dessert:
*Fill glasses a third of the way up with key lime mousse. Any glass that’s 4-5 ounces will work.
*Place a spoonful of whipped cream on mousse.
*Add a spoonful of mango salad.
*Sprinkle graham crumbs on top of whipped cream.
