Egg and Ham Salad




This recipe comes courtesy of Chef Eli Martinez.


Makes 8 servings

Preparation Time: 15 minutes


Ingredients:

2 cups of ham, cubed

1/4 cup parsley, chopped

2 tablespoon chives, chopped

Juice of half of a lemon

14 boiled eggs, chopped

1/4 cup Dijon mustard, to taste

1/2 cup mayonnaise

Salt and pepper to taste


Preparation:

Combine ham, chives, parsley, and lemon juice and stir thoroughly.

Next add eggs to the bowl and stir well.

Sprinkle in salt and pepper, dijon mustard, and mayonnaise and mix until fully combined.

Enjoy!
