Curry Chicken Salad

With schedules busier amid back to school, utilizing quick recipes is an easy way to take some stress off of your shoulders. This curry chicken salad is a great meal to pack on the go and also keeps well in the fridge for a few days. The addition of curry powder takes a classic chicken salad to new heights. Makes 4 servings

Preparation Time: 15 minutes


Ingredients:

*1 teaspoon curry powder

*1/2 teaspoon apple cider vinegar

*1/4 teaspoon salt

*1/3 cup mayonnaise

*1 1/2 cups cooked chicken, shredded

*1/4 cup grapes, quartered

*1/4 cup celery, diced

*1 tablespoon onion, finely diced

*1/4 cup cranberries, chopped

*1/4 cup walnuts, roughly chopped


Preparation:

*In a bowl mix together the curry powder, apple cider vinegar, salt, and mayonnaise.

*Add in the chicken, grapes, celery, and onion, stirring until well combined.

*Gently stir in the cranberries and walnuts.

*Sever over salad, with crackers, or topped on a grain like quinoa. Enjoy!
